Pet Nat Cider - 7.2% ABV

This Pet Nat style cider had a wild journey. Made from 2022 apples, slow fermented and aged for 18 months in a bourbon barrel. A secondary fermentation was then started in the barrel where it was quickly stopped, canned and finished its fermentation in the can. The cans aged another six months.

Complex, tannic, and bone dry. Notes of green apple, papaya and oak. It’s funky, bubbly and strange. 

If you like your cider sweet (or even medium sweet) this cider isn’t for you. Imagine a cider with no sugar in it, and then take ever more sugar away and that’s about how dry it is.
